here's a recipe for Nepalese Momo, a popular dumpling dish:
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup water
- 1 pound ground meat (chicken or lamb)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 teaspoons ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Instructions:
- In a large bowl, mix together the flour and salt. Add water gradually and knead the dough until it becomes smooth and elastic. Cover the dough with a damp towel and let it rest for about 30 minutes.
- In a separate bowl, mix together the ground meat, onion, garlic, ginger, cumin, coriander, turmeric, cayenne pepper, cilantro, salt, and pepper.
- Roll out the dough into small circles and place a spoonful of the meat mixture in the center of each circle. Fold the circle in half and seal the edges by pinching them together.
- Place the momos on a steamer basket and steam them for about 10 minutes.
- Serve the momos hot with a side of tomato chutney.
